Position Overview

The Restaurant Manager will supervise and direct the Zero Restaurant + Bar staff, foster and maintain relationships with customers, exhibiting a strong passion for creating truly wonderful and memorable dining experiences. Will also act as a liaison between kitchen and guests to ensure Restaurant + Bar runs smoothly and efficiently.


Essential Functions: This position is tasked with overall food and beverage services management and oversight of the Zero Restaurant + Bar while also integrating with hotel-side management. Must possess strong communication skills, both verbal and written, and demonstrate outstanding leadership. Manager must be able to delegate responsibilities, organize complex projects, and establish priorities consistent with hotel and restaurant objectives. Must be able to work well with others and help with other responsibilities as needed in order to maintain an environment of teamwork.

Hiring — for all Restaurant + Bar service positions
Maintain level of staffing required for all seasons.
Create and post job openings, specifying roles and responsibilities, required skills.
Interview candidates and select best candidates for available positions.
Work with Easton Porter Group HR Director to collect and maintain all required documentation and files.

Training — including fine dining tableside service, wine service, and food running
Implement and ensure all new Restaurant staff successfully complete Training Plan with documentation.
Define Steps of Service with detailed training steps.
Administer Skill Certifications, including hand-out materials, written tests and quizzes, with checklist review after initial training period.
Keep current staff up to date on any menu changes.
Ensure bar staff are appropriately trained on Liquor Service — TIPS training and documentation.

Scheduling — all Restaurant + Bar service and support staff
Work with Culinary team to create weekly schedules against revenue forecasts to manage labor costs and achieve benchmark goals.
Watch for Overtime and evaluate as employees are approaching to control labor costs.
Confirm weekly program with all staff and ensure adherence to set schedule by monitoring time and attendance.

Daily Operations — administrative duties
Complete nightly Daily Sales Reconciliation and Tip Allocation.
Manage check log, make bank deposits, and track receipts when necessary.
Oversee OpenTable system and respond to reservations.
Monitor Zero George Restaurant + Bar social media and respond to customer reviews on Facebook, OpenTable, Yelp, and TripAdvisor.
Oversee ordering of restaurant and bar supplies using established PO protocols.
Maintain monthly restaurant and bar inventories, track variances, and maintain par levels.
Set Pre-Shift and Post-Shift checklists and ensure critical information is communicated to staff clearly and in a timely fashion.

Restaurant-Specific Responsibilities:
Maintain high level of quality of the a la carte dinner service.
Help streamline and increase staff understanding of Revel.
Oversee and promote nightly Happy Hour, growing customer loyalty base.
Coordinate and build upon established cocktail program and wine list, costing and running analysis on current menus and inventory.
Help promote and grow new Chef’s Tasting Menu experience.
Help coordinate and grow private events at Zero George.

Hotel-Side Responsibilities:
Develop understanding of front desk Concierge services, local Charleston offerings, and general hospitality business principles.
Gain proficiency with RoomKey to make reservations, book rooms, and add on services as needed.
Build relationships with guests to anticipate and take care of needs and fulfill requests.
Effectively communicate any concerns with the Operations and Management teams.
Maintain Service Standards in conjunction with the Operations team.
Help staff understand relationship between Revel and RoomKey.
Assist with hotel operations and quality control SOP’s.
Assist with hotel inventories including room amenities, linens, etc.
Actively participate in management and solution meetings.
Assist hotel operations as evening hotel manager on duty during lower demand periods.

Must have a least 3+ years experience in restaurant management.
Must be energetic, a self-starter, and able to work in a fast-paced environment.
