S. Pellegrino Young Chef 2015
S.Pellegrino Sparkling Natural Mineral Water announced this week the 10 U.S. finalists in the S.Pellegrino Young Chef 2015 competition, and one of Charleston’s young guns is on the list. Chef Vinson Petrillo, Executive Chef of Zero George Hotel and Zero Café + Bar, has been selected from a field of more than 3,000 nominations submitted from around the globe. Finalists were chosen by a panel of culinary experts from ALMA, the world’s leading international school of Italian cuisine. Each nominee submitted an original dish and was evaluated in accordance with the five rules, including “ingredients, skills, genius, beauty and message.” Chef Petrillo’s dish featured “Pressurized Octopus, Chorizo, “Parsley” Wagyu Cheek Agnilotti, and Octopus Ink Emulsion.” The dish is currently on his menu at Zero Café, open Tuesday through Saturday for dinner.
The 10 chefs will compete next month in New York City and the winner will continue on to the global challenge, held this summer in Milan. Those chefs will present their dishes to a jury of seven internationally renowned chefs, including Gastón Acurio; Yannick Alléno; Massimo Bottura; Margot Janse; Yoshihiro Narisawa; Eric Ripert; and Joan Roca. The winning contestant will be named “S.Pellegrino Young Chef 2015.”
Chef Petrillo is joined by these other top 10 U.S. finalists: Caroline Williams (The Admiral, Asheville, NC); Christopher Teixeira (Chicago, IL); Dan Shu (Daniel, New York, NY), Daniel Beal (Atelier Crenn, San Francisco, CA); Danny Sterling (The Everglades Club, Palm Beach, FL); Eric Rowse (The Eatery, Pasadena, CA); Phillip Frankland Lee (Scratch Bar – The Gadarene Swine, Los Angeles, CA); Ramiro Exposito (Diegos Andalucia Tapas & Delicatessen, Miami, FL); and Riley Huddleston (Godfrey Hotel Chicago, Chicago IL).
